Aloo stuffed Tinda Curry / Potato stuffed Indian Baby Pumpkin Curry

Tinda  is also known as Indian round gourd or  apple gourd or Indian baby pumpkin. We can make various stuffing curries with tinda. Today's recipe is aloo stuffed tinda. In this stuffing will be very simple. Aloo will be fried and stuffed in tinda and then tinda's will be cooked in rich gravy made with cashew nuts, melon or poppy seeds and curd. Making potato stuffing is very simple and potato adds more taste to the curry.

Serves : 3 to 4
Total Time : 35 min.

Ingredients for stuffing:
  • Tinda (Baby Pumpkin)  - 4
  • Small Potato - 4
  • Tinda pulp 
  • Red chilli powder -  1/2 tsp
  • Cumin seeds - 1 tsp
  • Salt to taste
  • Turmeric - pinch
Ingredients for gravy: 
  • Melon Seeds or Poppy seeds - 2 tsp
  • Cashew nuts - 6
  • Fennel seeds - 1 tsp
  • Bay leaf -1
  • Green chillies - 3
  • Coriander powder - 1 tsp
  • Red chilli powder -  1 tsp
  • Turmeric powder -1/4 tsp
  • Garam masala - 1/4 tsp
  • Salt to taste
  • Hing - pinch
  • Curd - 1/2 cup
Preparation:
  • First remove the skin of tinda / baby pumpkin, and scoop out the pulp and seeds and punch it with the help of fork.
  • Make cashew nuts and melon / poppy seeds into paste.
  • Peel and cut potatoes into small pieces.
For Stuffing : 
  • Heat oil in a pan add cumin seeds, chopped potatoes, cook this, add turmeric, salt, pulp of tinda / pumpkin, chilli powder, cook for some time, take this mixture and stuff it in the baby pumpkin.
For gravy: 
  • Heat oil in a pan and add fennel seeds and bay leaf.
  • In a bowl, take chilli powder, garam masala, salt, turmeric, hing, coriander powder, and add little water and mix and add this in to the oil. ( mixing in water prevent them from burning)
  • Add cashew nut, and melon seeds paste, green chillies, and beaten yogurt and cook for some time.
  • Add stuffed baby pumpkins, lid on and cook until they become soft and transparent, switch off the flame. 
  • Serve this with roti or rice. 

Peel potato and  tinda


chop potatoes into small pieces
Scoop pulp from tinda and discard black and hard seeds.
Cook potato and tinda pulp
Stuff potato into tinda
Grind cashews and  melon/ poppy seeds into paste
Mix all the powder ingredients with water
Cook the cashew paste, yogurt, chillies and above powder mixture.
Add stuffed tinda and cook with lid on.
