Quinoa Oatmeal Blueberry Pancakes


Is it difficult to make kids and adults eat healthy food? Maybe not, if the healthy food is tasty too. Pancakes are very easy to prepare and I always replace all-purpose flour with oats flour to make pancakes. This time I added quinoa flour and took my little cook(My kid) help. They turned out so good that my kid can't resist them. She enjoyed a lot while making and eating pancakes and even when taking photos. I told my kid to wait until I took photo's for the pancakes, but you can find two pancakes are missing in the photo as I told the batter yield 6. You may probably know why :-).

Prep Time : 5 Minutes
Cook Time : 12 to 15 Minutes
Yield : 6 (May vary depending on size)

Ingredients

  • Blueberries - handful or as wish
  • Quinoa Flour - 1/2 cup
  • Oats Flour - 1/2 cup
  • Eggs - 2
  • Milk - 1/2 cup
  • Dates paste - 4 tbsp or to  taste (We can replace it with honey)
  • Salt - Pinch
  • Olive Oil to sprinkle

Preparation:

  • For quinoa and oats flour, grind quinoa and oats separately in a mixer.
  • For date paste, soak dates over night and make into paste in a mixer and we can store this paste for a week.
  • Mix all the ingredients in a bowl.
  • Heat griddle, add little oil and pour a ladle of batter and cook on both side till golden brown and repeat the process with the remaining batter.
  • Serve them with honey.

Last week, I took my kid to hospital for her vaccination,  there was a magazine in which see saw a recipe which is in octopus shape and started asking me to make that. So decided to make pizza in that shape. I want to make pizza healthy, so used oat flour and unbleached all purpose flour. She was very happy looking at her octopus pizza. With remaining dough I made two small pizzas using green salsa as sauce which is so delicious and spicy.

Yield: 2 small pizzas and 3 Mini Octopus shaped pizzas.
Ingredients:
  • Oats Flour - 1 cup
  • Unbleached All purpose flour - 1 cup
  • Wheat flour - 1/4 cup
  • Butter - 1 tbsp
  • Honey - 2 to 3 tbsp
  • Egg - 1
  • Yeast - 1/2 tbsp
  • Salt - 1/2 tbsp
  • Corn - 1/4 cup
  • Capsicum - 1/2 piece
  • Green Salsa - 1/2 cup or your  favorite sauce
  • Onion - 1/2 piece
  • Cheese - 1/2 cup
  • Warm water - 1/2 cup
Preparation:

  • Add yeast and honey to warm water and keep it aside for 10 minutes.
  • Make oats into fine powder in a blander or mixer.
  • In a bowl, mix oats flour, all purpose flour, salt and add butter and mix well with hands. Now add egg and mix well.
  • Pour in the yeast mixture into the flour and mix well into a soft dough by adding wheat flour little by little. (If water is sufficient, no need to add wheat flour)
  • Cover the dough and keep in warm place for 1 1/2 hour.
  • Preheat oven to 500 degree F.
  • Now knead the dough and roll with the rolling pin and poke holes and add your favorite topping or salsa, veggies and cheese.
  • Place in the  for 10 minutes and serve hot.( This will not rise like normal pizza, but taste great)
For Octopus Shape:
  • Take lemon size dough and roll it like small pizza base.
  • Keep the upper part of the base like that and start from the middle to lower part, cut the dough with a knife to form the legs and bend them to form shape.
  • After making the legs, if u have any excess dough on the head part cut and remove it.
  • Place sauce, veggies and cheese on the head part and if you want cover it with a layer of dough and press it to surprise your kids .
  • Preheat oven to 350 degree F, and bake 10 to  15 minutes until they turn golden.

Vegetable Oats Uttapam

                       These days I am using oats a lot as they are good for health. I made uttapam with oats, had a bite, and I want to blog the recipe right away, Mmmmmm yummy.



Ingredients:

  • Oats -1 cup
  • Rava -1/2 cup
  • Curd -1 cup
  • Cumin seeds/jeera - 1/2 tsp
  • Salt as per taste
  • Oil for uttapams
  • Onion -1 medium size
  • Green chilli -1
  • Tomato - 1 
  • Capsicum - 1/2
  • French beans - 5 ( I did not add as i did not have it at that time)
  • Carrot -1 grated
  • Coriander leaves finely chopped ( I did not add as I did not have it at that time)

Preparation:

  • Powder oats finely.
  • Finely chop onions, green chilli, capsicum, tomato, french beans and mix them, keep aside.
  • In a bowl, mix together powdered oats, rava, curd, cumin seeds and salt needed.
  • Keep it aside for half an hour.
  • Add enough water to get an uttapam consistency.
  • Heat a non stick tawa, when it is hot enough, pour a ladle of batter and spread a little. The uttapam should be thick like regular uttapam. Sprinkle the vegetable mix on uttapam. Now reduce the flame to medium.
  • Drizzle a tsp of oil around the dosa.
  • Once it start lifting around the corners, flip the uthappam to the other side and drizzle just 1/4 tsp of oil.
  • Once it is cooked, remove from the tawa and serve with spicy chutney . Repeat the same process for the rest of the batter.

Oatmeal Omelet

We will make omelet with eggs and sometimes we will make by adding besan (chickpea flour) to egg mix. We can make it more healthy by adding oats flour,it is a quick, light and protein packed breakfast.

Prep time: 5 min.
Cook time :10 min.
Yield : 4.
Ingredients:

  • Eggs - 2
  • Oats flour - 1/4 cup
  • Salt -  as per taste
  • Onion -  1 small
  • Tomato - 1 small
  • Red-chilli powder - 1/2 tsp or Chilli - 1.

Method 
  • In a bowl, mix together all ingredients.
  •  Heat a skillet on medium-low heat.
  • Pour mixture on skillet and allow to cook.
  • Serve hot.

Benefits of oats:

 Dietary fiber - oats are rich in a specific type of fiber called beta-glucan. This particular type of fiber is known to help lower levels of bad cholesterol. One cup of oats contains 16.5 grams of fiber, which is roughly half of a person's recommended daily intake of fiber.12

Minerals - oats contain manganese, selenium, phosphorus, fiber, magnesium, and zinc. Oats are also rich in carotenoids, tocols (Vitamin E), flavonoids and avenanthramides - a class of polyphenols.

Calories - one cup of oats contains approximately 607 calories.

Prep time - under 15 min
Cook time - 10 min
Serves - 2 to 3
  
Ingredients:
  • 1 cup rolled oats
  • 1 cup reduced fat milk or soy milk
  • 2 cup water
  • 1/4 cup of mixed dried fruits(Badam,pistachios,Walnuts...)
  • Fruits of your  choice(Apple,Grapes,Orange,Strawberry,Blackberry....)
  • Honey as per taste

Method:

 
  • Take water in a pan. When water is boiling, add oats bring to the boil,  and simmer for 4-5 minutes, stirring from time to time and watching carefully that it doesn’t stick to the bottom of the pan.(Oats will observe water, if need more water)
  • Mean while chop mixed dried fruits and fruits.
  • When oats are done switch off the stove.
  •  Move cooked oats into serving bowls, add milk , honey and fruits.
  • Sprinkle chopped dried fruits and serve hot or cold.

Oatmeal Banana Pancakes

    Today i want to make healthy breakfast for my husband and kid.  I made banana pancakes. Everyone will think what's new in it, pancakes are healthy.But we will make pancakes with all-purpose flour.We can make pancakes more healthy by using  oats flour instead of  all-purpose flour.  No baking powder is required only  egg, banana and oats flour.My kid eat only idly for breakfast, but know she like these pancakes.

                                                     Yield : 5 pancakes.(depends on size)
Prep time: 5 min.
Cook time : 10 min.

Ingredients :

Egg - 1 no
Banana - 1 large.
Oats flour - 1/4 cup.
Milk  - as needed.
 Salt - pinch




Method:

1. Mash the  banana. Beat the egg.

2. Mix mashed banana, egg, salt and oats flour.If u want more sweet add little-bit jaggery.  Add milk to get the consistency.

3.  Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the  griddle. Brown on both sides and serve hot.


 
 
           We can make oats powder by simply grinding the oats. If u don't have oats in hand, add wheat flour instead  of oats flour.
