Greenery, looking at the greenery of nature, how you will feel and what you will think? I will think about walking on the green grass with bare feet holding the hands of our dear ones(oops, we have only two hands, just kidding), looking at the green trees, feeling the cold breeze, listening to the beautiful songs of birds, and mean while bees whispering something in the ears, sun playing hide and seek by hiding behind the silver clouds, first rain drop on face like a Pearl..........
Today's recipe is hariyali chicken. As you all known hariyali means Greenery. This recipe will be in green color as we use coriander and chillies. Few months back when I went to India I learned this Hariyali Masala recipe from my sis. After coming to Dallas I made this masala many times to make hariyali chicken fry, hariyali chicken drumsticks, hariyali whole chicken roast, hariyali-hariyali every time, as it is my kid favorite now.
Ingredients:
- Whole chicken - 1 ( 1.25 lb)
- Coriander leaves - 1/4 cup
- Chillies - 6
- Ginger-garlic paste - 2 tsp
- Pepper powder - 1 tsp
- Garam masala - 1/4 tsp
- Soy Sauce - 1 tsp
- Vinegar - 1tsp
- Lemon juice - 1 tsp
- Salt to taste
- Clean the whole chicken and pat dry with tissue papers.
- Make deep slits in the chicken with a sharp knife.
- Grind remaining ingredients in a mixer or blander into paste. Adjust salt and apply the paste to the chicken and marinate at least for 2 hrs. (If like add some mint)
- Preheat oven to 375 degree F ( 180 degree C)
- Heat 3 tsp oil in a pan and roast the hen on both sides until they turn brown.
- Lightly grease oven pan and place the hen. If you like add chopped potatoes and onions to the pan and then place hen.
- Cover with a foil and place in the oven for 30 minutes and remove the foil( If the chicken look dry after removing the foil, pour that liquid that oozed out from the chicken on top of the chicken ) and cook another 30 min or until done.(Check in between).
