Vegetable Lemon Pulihora

Pulihora is a traditional recipe of Andhra pradesh, Karnataka and Tamilnadu of India. It is known as puliyodhara and Chitrannam. It will be offered as naivedyam for god. There are many varities of pulihora like Chintapandu(Tamarind) pulihora, Nimmalaya(Lemon) pulihora, Dabbakaya(Citron) pulihora, Gongura(Sour leaves) pulihora, Mamidikaya(Mango) pulihora....

Any pulihora recipe will be very easy to prepare. Cooked rice will be tampered with lentils and red and green chillies and flavored with a sour ingredient of our choice.

Vegetable Lemon Pulihora

Today's recipe is lemon pulihora. My Mom used to add carrots to pulihora for my lunch box, which taste very good. So I started adding more veggies like beans, green peas. This recipe not only taste good but also looks good and not only attract kids but also attracts adults. When no time we can make this quick recipe and also be satisfied that we included some veggies in the meal.

Ingredients:
  • Raw Rice - 1 cup
  • Carrot - 1
  • French beans - 10
  • Green peas - 1/4 cup
  • Green chillies - 4
  • Red chillies - 3
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Peanuts -  3 tsp
  • Urad dal/ Black gram - 1.5 tsp
  • Chana dal / Bengal gram - 1 tsp
  • Ginger  - 1 tsp, finely chopped
  • Curry leaves - 1 sping
  • Turmeric powder - 1 tsp
  • Lemon - 1
  • Oil - 4 to 5 tsp
  • Salt to taste
Preparation:
  • Finely chop carrot and green beans and boil green peas. ( we can also boil carrot and beans, but I didn't boil them). Slit green chillies length wise.
  • Cook rice ( 1 cup rice, 2 cups water). Add turmeric powder and 1 tsp oil in 2 cups water and cook rice in it and puff the rice with fork and let it cool.
  • Heat oil in a pan, add mustard seeds and cumin seeds. When they start spluttering, add peanuts, 
  • rad dal, chana dal,curry leaves, ginger, red chillies and green chillies.
  • When they turn brown, add chopped veggies and cook.
  • Now add this mixture to the cooked rice, add salt and lemon juice (adjust to taste) and mix well.
