Tomato Soup


Tomato Soup

Winter: Cold breezes, Frozen days with Some Hot Soup....  Soups are easily digestible. Tomato soup is very easy to prepare.We can add other vegetables like carrot, celery and capsicum. Basil is the best combination for tomato. Instead of basil we can also add tulasi leaves.

Tomato Soup


Ingredients:
  • Medium Tomatoes - 5
  • Chopped Carrot - 1/2 cup
  • Chopped onion - 1/2 cup
  • Capsicum - 1/2 piece, chopped
  • Garlic cloves - 2
  • Basil or Tulasi powder - 1/2 tsp (optional)
  • Cumin seeds/Jeera - 1/2 tsp
  • Ground pepper to taste
  • Salt to taste
  • Butter/Olive oil - 2 tbsp
Preparation:
  • Heat oil in a pot, fry cumin and garlic. Add chopped onion, carrot and capsicum and fry for 2 minutes.
  • Add chopped tomatoes and basil or tulasi powder and cook till tomatoes turn tender.
  • Let the mixture cool and puree in a blander.
  • Put the puree back to the pot, add water up to 3 cups or as required and cook until a boil and adjust salt and pepper and serve. 
Some healthy Suggestions:
  • I am not using any thickeners like corn flour or maida/all purpose flour.
  • If  you are making for yourself, no need to strain the puree so that soup will be thick enough.
  • Otherwise, add little rice flour to the water and mix it to the puree without forming lumps and cook until a boil or there is no raw smell.
If Making For Guests:
  • Mix a tablespoon of cornflour in water and mix in the soup before switching the stove off and cook till little thickens.
  • Otherwise, add 4 tablespoon butter to a pot, add 2 tablespoon all purpose flour/maida and fry till it turns golden and add puree little by little without forming lumps and cook.
