Spring Onion Egg Bhurji

Winter makes me lazy. Don't want to cook and eat. I am looking for easy, simple and quick recipes to prepare. Today I decided to make spinach dal and  spring onion egg bhurji as a side, which is very easy to prepare and taste yummy. Spring onion has many health benefits and add more flavor to the dish to which it added.

Serves : 2
Time : 20 Minutes
Ingredients:
  • Eggs - 3
  • Spring onions - 10
  • Onion - 1, Medium
  • Chillies - 2 (optional)
  • Ginger-garlic paste - 1/2 tsp
  • Mustard seeds/Avvalu - 1/2 tsp
  • Red chilli powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Garam Masala - 1/4 tsp or to taste
  • Oil - 1 tbsp
Method:

  • Heat oil in a pan, add mustard seeds. When they start splutter add chopped onions, chillies, turmeric powder and little salt.
  • After 2 minutes add ginger-garlic paste and cook until there is no raw smell and onions turn transparent. 
  • Add spring onions and cook for 2 to 3 minutes and add red chilli powder, garam masala and coriander powder, mix and cook for 2 to 3 minutes on medium heat with lid on.
  • Add eggs and cook 2 minutes and then mix. Adjust salt.
  • Serve with rice or chapati.
