Aloo Kurma/Potato Kurma

Baked,mashed, curried - It will be yum....

Crispy Chips and Fries - Can't stop eating.....

It is Yummy and Tasty Potato..........

For kids and elders, the most favorite veggie is "Aloo/Potato" and Known as "Bangaladumpa" in Telugu Language. My Grand Mom used to tell me that during her childhood days only very few people used to do potato cultivation and those people used to exchange potatoes for some other food items. In those days, if potatoes are in food menu of a function means it was the biggest function(Very rich people) in that area. She used to tell that potatoes are very costly in those days. But know potato is commonly available vegetable and we can find recipes made with potato in many functions. Today's recipe is Aloo Kurma.....


Aloo Kurma/Potato Kurma

Serves : 3 to 4
Ingredients:

  • Aloo/Potato - 4
  • Onions - 1, Large
  • Tomato - 1, Large
  • Red Chilli powder - 1.5 tsp
  • Coriander powder - 1 tsp
  • Cumin powder - 1/2 tsp
  • Ginger-garlic paste - 1 Tbsp
  • Salt to taste
  • curd - 1/4 cup
  • Turmeric powder - 1/2 tsp
  • Oil - 3 Tbsp

For Masala:

  • Fennel seeds - 1/2 tsp
  • Bay leaf - 1
  • Cardamon - 3
  • Cloves - 3
  • Star Anise - 1
  • Cinnamon stick - 1 inch
  • Curry leaves - 10

To make paste:

  • Poppy seeds - 1 Tbsp
  • Cashews - 1 Tbsp
  • Coconut Powder - 1 Tbsp

Preparation:

  • Soak poppy seeds, cashews for 20 minutes and make into paste along with coconut by adding little water.

  • Heat oil in a pan, add all the ingredients under masala and fry for a minute.
  • Add chopped onions, turmeric and little salt and cook till onions turn brown. Add ginger-garlic paste, chopped tomato and cook till there is no raw smell and tomatoes are tender.

  • Add red chilli powder, cumin powder, coriander powder poppy seed paste mixture and cook for 2 minutes and add potato pieces and cook for 4 to 5 minutes and add water and cook with lid on until potatoes are cooked and oil separates with lid on. Add curd, mix and cook for 3 minutes on low heat without lid.
  • Enjoy potato kurma with biryani or rotis.

Note:

  • We can fry potato pieces before and then add to curry and cook for 5 minutes are until they are done.
