Egg is an all time favorite to my family. Even for egg lovers having egg in the same way will be boring. I am also bored of making egg fry, egg bhurji every time. Today's recipe is Egg Hariyali curry. We are going to use min-coriander-green chilli paste for this curry and preparation will be very easy.

Ingredients:
- Boiled Eggs - 4
- Onions - 2, Medium size
- Green chilli - 4
- Pudina/Mint - 3 Tbsp
- Coriander leaves - 1/4 cup
- Coriander powder - 1/2 tsp
- Cumin powder - 1/2 tsp
- Red chilli powder - 1/2 tsp
- Garam Masala - 1/2 tsp or to taste
- Turmeric powder - 1/2 tsp
- Oil - 3 Tbsp
- Coriander leaves for garnishing
- Chop onion. Grind mint leaves, coriander leaves and green chilli.
- Heat oil in a pan, add onion,little salt and turmeric powder and fry till it turn brown.
- Add ginger-garlic paste and mint-coriander paste and cook till there is no raw smell. Add red chilli powder, cumin powder, coriander powder, mix and add little water.
- Cook till oil separates and add eggs, garam masala, adjust salt and cook for another 5 minutes.
- Garnish with coriander and serve.
- We can add more or less mint-coriander paste depending on taste.
