Egg Hariyali Curry

Egg Hariyali curry

Egg is an all time favorite to my family. Even for egg lovers having egg in the same way will be boring. I am also bored of making egg fry, egg bhurji every time. Today's recipe is Egg Hariyali curry. We are going to use min-coriander-green chilli paste for this curry and preparation will be very easy.

Serves: 3  

  • Boiled Eggs - 4
  • Onions - 2, Medium size
  • Green chilli - 4
  • Pudina/Mint - 3 Tbsp
  • Coriander leaves - 1/4 cup
  • Coriander powder - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Red chilli powder - 1/2 tsp
  • Garam Masala - 1/2 tsp or to taste
  • Turmeric powder - 1/2 tsp
  • Oil - 3 Tbsp
  • Coriander leaves for garnishing
  • Chop onion. Grind mint leaves, coriander leaves and green chilli.
  • Heat oil in a pan, add onion,little salt and turmeric powder and fry till it turn brown. 
  • Add ginger-garlic paste and mint-coriander paste and cook till there is no raw smell. Add red chilli powder, cumin powder, coriander powder, mix and add little water.
  • Cook till oil separates and add eggs, garam masala, adjust salt and cook for another 5 minutes.
  • Garnish with coriander and serve.
  • We can add more or less mint-coriander paste depending on taste.
