Chicken Fried Rice


Don't judge anyone by looks and on little information. This is what everyone will tell and sometimes we will learn it by our own experiences. One thing that we must always remember is if anyone judge us in anyway, leave it to them and be happy. It is showing what they are. Don't feel sad and think they are steeling your happiness. It is you giving your happiness by thinking about them and their judgement. Forgetting everyone's judgement is little difficult, but not impossible. Be happy and eat healthy...... 

Chicken Fried Rice

Delicate and delicious....... 

This is not my first impression on fried rice. I judged it by looks and it proved me wrong with its enjoyable flavor. I still remember my Mom making fried rice for the first time. I remembered it because it didn't gave me good impression in looks. No masala and No herbs, very simple and felt it will be tasteless. The only thing that made me eat is, it is enticing with lot of colorful veggies. From the first time onward's I became a big fan of fried rice. My Mom used to re-fry the fried rice in little ghee which adds additional flavor. 

Serves : 3 to 4 persons
Prep Time : 15 Minutes
Cook Time For Rice : 20 Minutes & For Making Fried Rice : 20 to 25 Minutes along with Chicken

Ingredients 

  • Rice - 2 cups 
  • Chicken Breast - 2
  • Eggs - 4
  • Ginger-garlic paste - 1 Tbsp (We can also add chopped ginger & garlic)
  • Soy sauce - 3 tsp
  • Red chili sauce - 2 tsp 
  • Red chili powder - 1 tsp
  • Salt to taste
  • Cooking Oil - 4 Tbsp

Veggies

  • Onion - 1, small
  • Green Chili - 2 (optional)
  • Carrot - 1, Large
  • Peas - 1/2 cup
  • Capsicum/Bell pepper - 1
  • Spring onion - 5


Preparation

  • Wash and cook rice adding 4 cups water. When rice is done, fluff the rice with a fork and let it cool. (We can also use leftover rice)
  • Mean while finely chop veggies.
  • Wash chicken and make into small pieces.

Let's make Chicken Fried Rice



  • Heat 1 tsp oil in a wok, add chicken pieces and let them cook. When they are half done add salt and red chili powder and cook till done. (They cook within 10 minutes as we made them into small piece). Dish out them and keep aside.
  • Add little oil to the wok and when oil is hot crack eggs into it and fry them and dish out and keep aside.


  • Heat remaining oil in the wok, add ginger-garlic paste, chopped veggies (Add spring onion white part and keep green part for garnishing) and cook till half done on high flame.
  • Add rice, soy sauce , chili sauce, salt. Mix well and fry for a minute.
  • Add chicken pieces, egg and fry for a minute and switch off the stove.
  • Garnish with spring onions and serve.
