I love summer evenings.........
Cool breeze after long hot sunny afternoon,white clouds all over the sky and the sun play hide and seek before disappearing into another world and suddenly sky start sprinkling and insects chirping, birds singing, frogs croaking with joy, the fragrance of flowers spread in all directions and a beautiful and colorful rainbow appear suddenly from nowhere. All of a sudden, sprinkling stops and sky will shine like a golden plate saying goodbye to sun and welcomes moon.
Then a nice aroma will start spreading from my kitchen competing the fragrance of flowers. My Mom will do some magic with her hands and prepare dinner. I love summer for another reason too. My Mom will prepare some recipes particularly during summer evenings like Tomato curry, Pesarapappu charu, Egg Fry... followed by homemade ice-cream or fruit salad or a mango...... I want to go back to my childhood days....
Total Time - 30 Minutes
Ingredients:
- Tomatoes - 3, Large
- Onion - 1, Large
- Curry leaves - 1 spring
- Ginger-garlic paste - 1 tbsp
- Red chili powder - 1.5 tsp or to taste
- Coriander powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Garam masala - 1/2 tsp
- Salt to taste
- Oil - 2 tbsp
- Butter - 1 tbsp
Preparation:
- coarsely grind onion.
- Heat oil in a pan, add curry leaves, onion paste, ginger-garlic paste and fry there is no raw small from onion and turns golden brown. Stir in between.
- Add tomato pieces, coriander powder, red chili powder, salt and cook till tomato pieces turn tender and oil oozes out.
- Add garam masala and coriander leaves, mix. Switch off the stove.
- Add butter on top and serve with hot rice or roti.
Note:
- Don't add too much garam masala.
