Quinoa Chickpea Salad


Hi Guy's, Let's eat bird food and stay healthy. I can't even say how much I love salads. If my hubby ask me to choose a restaurant to go, I always select the one which serve salads. Who don't love fresh and colorful salad with a tangy, sweet, creamy dressing. But at home I prefer low calorie salad dressing made with lemon, pepper, garlic and some times dressing made with Dijon mustard. 


Quinoa Chickpea Salad


Once I had couscous chickpea salad at a restaurant. From there I got the idea of  quinoa chickpea salad. My hubby loved it and no need to ask me. For more salad recipes stay tuned guy's. 

Ingredients For Salad

  • Uncooked Quinoa - 1/2 cup
  • Cooked Chickpea - 1 cup
  • Plum or Cherry Tomatoes - 10 
  • Romaine Lettuce Leaves - 6 to 8

For Salad Dressing

  • Lemon  - 1
  • Olive Oil - 3 Tbsp
  • Salt to taste
  • Pepper to taste
  • Garlic Clove - 1 

Preparation

  • Cook Quinoa with 1 cup of water until done or as directions on the package.
  • We can use canned chickpea or fresh. If using fresh cook them with sufficient water until done.
  • Make tomatoes into two.
  • Crush garlic with a pestle.
  • Take a bowl, add garlic paste, salt, lemon juice, olive oil and pepper and whisk.
  • To a large bowl add cooked quinoa, chickpea, tomatoes and the salad dressing and combine well till the dressing coated well to quinoa and chickpea.  
  • Serve them on leaves and enjoy.
