Avocado Sooji Halwa


Avocado Sooji Halwa
I have an avocado in my fridge which I bought a week back. Today I decided to make some desert with it and started searching avocado desert recipes, but I am not satisfied with any of them. I closed my laptop and gave work to my mind. Started thinking what I can do with my cute avocado. Hurry, got an idea. Went into my kitchen, mashed my avocado, roasted sooji and added some milk and water to it. The output is beautiful, yummy light green color halwa.



Avocado Sooji Halwa

Prep Time: 5 min.
Cooking Time: less then 15 min.
Servers: 6 persons 

Ingredients:
  • 1 Avocado Paste
  • 1 cup Sooji / Rava
  • 1 cup Milk
  • 2 cups Water
  • 3/4 cup Sugar
  • 3 tsp Ghee
  • 2 tsp Cashew nuts
  • 2 tsp Raisins 

Method:
  • Heat 1 tsp ghee in a pan. Fry cashew nuts and raisins. Keep aside.
  • In the same pan heat 2 tsp ghee, add sooji and roast until sooji turns into light golden brown and gives off a nice aroma.
  • While roasting sooji, in a separate pot bring the water and milk mixture to a boil.
  • Gently add the hot water and milk mixture to the sooji stirring continuously to prevent forming lumps. 
  • Add sugar and avocado paste to the sooji and stir. Cook on medium heat for 2-3 min.
  • Garnish with fried cashew nuts and risins and serve in individual bowls.
