Palak corn rice is one of the easy, healthy and delicious rice recipe to prepare.It is a perfect lunch box recipe. When I am in college I used to feel bore to have rice and curries every time so my mom used to pack me different variety rice recipes for my lunch and palak rice is one of them.This green rice with yellow corn will be very I catching.
We can prepare palak rice in two ways. In today's recipe I made palak gravy and then added the cooked rice. We can also make this with left over rice.
Ingredients:
- 1 bunch Palak (Spinach)
- 2 cups Raw Rice
- 1/2 cup Sweet Corn(Fresh or Frozen)
- 1 tsp Ginger-garlic paste
- 4-5 Green Chilli
- 1 inch cinnamon
- 1 small star anise
- 1 bay leaf
- a pinch of mace (jayitri or javitri)
- 3 green cardamoms
- 2-3 cloves
- 1 tsp Fennel seeds
- Salt as per taste
- 1 Lemon Juice
- Cook 2 cups rice using 4 cups water.
- Wash spinach leaves and chillies and grind them into smooth puree.
- If using fresh corn boil and keep aside.
Method:
- Heat oil in a deep pan. When oil is hot add bay leaf, fennel seeds, cinnamon, star anise, mace, cardamoms, and cloves and fry for a min.
- Add spinach puree and ginger- garlic paste to the pan and let it cook till the moisture evaporates and starts leaving the sides of the pan.
- Add salt, rice and corn and mix well till the rice is hot.
- Switch off the stove and add lemon juice. Serve hot.
