Kobbari Rava Ladoo (Semolina / Sooji Coconut Ladoo)

Some time we feel life is very easy and some time we feel life is not very easy. When we were younger life will be so easy. We will be surrounded with love and caring. No responsibilities. The hardest thing when we are young are very simple things like home works, exams and silly quarrels with our friends. But we want to grow as soon as possible..... But life is easier....

When we become elder, our responsibilities will start. Sleepless nights with work, running every time with responsibilities, miss everyone who shared there love and caring when we are young.... Some time or may be every time we want to run back to the younger life were we see things with our hopeful eyes..... But life is still easier....

One thing we can do is we have to feel  that every thing happened in our life is for good. The day we made our parents proud, the day we met our loved one's, the day we became parents, when we think about these we feel life is easy.... So we have to enjoy each day, each minute, each second because we will never know what tomorrow will bring to us.....

Oops, I got a word in my mind and I started writing all this. You want to know that word, it is "easy". 
Today's recipe is Kobbari Rava Ladoo / Sojji Coconut Ladoo, which is very easy to prepare and very popular in India and will be so yum......

Kobbari Rava Ladoo (Semolina / Sooji Coconut Ladoo)

yield : 25 to 30 ladoos (Count may vary on size of ladoo)
Cook Time : less than 10 min
Prep Time : 15 min 

Ingredients:
  • Rava / Semolina / Sooji - 1 cup
  • Grated Coconut - 1 cup
  • Sugar - 1 cup
  • Milk or water - as required to make ladoo (approx 1/4 cup)
  • Cardamom powder - 1/4 tsp 
  • Cashew nuts - 4 tsp, chopped
  • Raisins - for garnishing
  • Ghee - 5 tsp
Method:
  • Take the fresh coconut and grate it using fine holes of the grater. Be sure to grate only white side of the coconut and not its skin or brown part.
  • Now take fine sooji in to pan, add tbsp of ghee, mix, start heat on medium high heat and dry roast for 6 to 7 minutes.
  • After rawa is roasted take that out on to separate dish.
  • Now in the same pan add grated coconut with a tbsp of ghee, mix and dry roast over medium heat for 3 to 4 minutes.
  • Now take out coconut and put that in to roasted sooji.
  • Now mix roasted sooji and coconut together.
  • Now take sugar in to pan, add water to that, bring that to boil over high heat.
  • After it comes to a boil, lower the heat down and cook the syrup for 4 to 5 minuts or until it gets little thick or close to single thread consistency.
  • After syrup is done, turn the heat off.
  • Add the roasted rawa coconut mixture in to syrup and mix well.
  • Add cardamom powder, mix, cover and allow it to rest for an hour or until all the syrupm gets soaked in sooji.
  • Give the mixture stir in between.

  • Heat 1 tsp ghee in a pan and fry cashews and raisins till golden brown and keep aside.
  • To the same pan, add rava and roast for 6 to 7 min on medium heat, stirring continuously. Rava should not taste raw.
  • Now add coconut to rava and fry for 2 min.
  • Dish-out rava and coconut mixture and add sugar, remaining ghee and cashews to the rava mixture. Mix well.
  • Now to make ladoo add little milk to small amount of rava mixture.
  • Take piste full of rava and make into ladoos. Repeat the process until you make all ladoos.
  • Store in air tight container. Don't leave them in air, they will become hard.
