Cranberry Upside Down Muffins

Do you saw Edible, beautiful, cute, shiny red pearls?  I saw them, brought them home and tried to eat them, but they were very sour. Can you guess what? Cranberries. So started goggling and found Cranberry sauce.Then again, started thinking what I can do with this sauce? So, finally I want to fill my cup cakes with this sauce, but don't know how it gonna taste as I am new to cranberries, so again started goggling the web and found this tasty recipe from joy of baking. It was a big hit. My kid, hubby and friends love them and me too.

These muffins are like, little sour and sweet of cranberry sauce with mildly flavored base which remembered my mom's cake, in one word delicious. Let's briefly see how to make cranberry upside down muffins. First we have to prepare sauce which will take 10 minutes. While it is cooling down we can prepare the batter. Then put little cranberry sauce in a muffin cup and batter on the sauce and bake for 20 minutes.

Cranberry Upside Down Muffins

Yield : 12 Muffins 
Cook Time For Sauce : 10 Minutes
Cook Time For Muffins : 15 to 20 Minutes

Ingredients For Cranberry Sauce: 
  • Cranberries - 1.5 cup
  • Sugar - 3/4 cup
  • Orange Juice - 1 Tablespoon
  • Orange Zest - 1 Tablespoon, Grated
Ingredients To Make Muffins:
  • All-purpose Flour - 2 cups
  • Sugar - 1/2 cup
  • Baking Powder - 2 tsp
  • Unsalted Butter - 4 tbsp, Melted
  • Salt - 1/2 tsp
  • Egg - 1, Large
  • Milk - 1 cup
  • Vanilla Extract - 1 tsp
Preparing Cranberry Sauce:

  • Combine cranberry, sugar, orange juice and orange zest in a sauce pan and cook until sugar dissolves and cranberry pops open for 10 minutes.
  • Switch off the heat and let it cool.
Preparing Muffin Batter:

  • Combine all purpose flour, sugar, baking powder, salt and mix.
  • In a bowl slightly beat egg, mix milk, melted butter,vanilla extract.
  • Add the egg mixture to the flour mixture and mix until combined. Batter will be thick.
Preparing Muffins: 

  • Preheat oven to 400 degree F (205 degree C).
  • Grease muffin cups and put cranberry sauce and spoon the batter over the cranberry sauce, repeat this with all the  muffin  cups.
  • Place the muffin tray in the preheated oven and bake for 15 to 20 minutes or until muffin turn golden brown and the toothpick inserted in the center comes clear.
  • Take them out and let them sit for 2 minutes and then invert them onto a wire rack and let them cool.
