Vankaya/Brinjal recipes are very famous in Andhra. Among them Gutti Vankaya Kura/Stuffed Brinjal curry is Andhra traditional curry. Almost in every house in Andhra, will have there own way of making Gutti Vankaya recipe and the stuffing may vary, but this recipe is everyone's favorite. Today I am stuffing my brinjal's with onion mixture, which will be very simple and taste delicious.
Serves: 2
Ingredients:
- Brinjal/Vankayalu - 8 to10 (Tender purple small brinjal)
- Onion - 2, medium
- Ginger-garlic paste - 1 tbsp
- Red chilli powder - 2 tsp
- Cumin-Coriander powder - 1 tsp
- Garam Masala - 1/2 tsp homemade or 1 tsp store bought
- Turmeric powder - 1/2 tsp
- Milk - 1/4 cup
- Salt to taste
- Oil - 4 tbsp
Preparation:
- Grind onions into coarse paste. Add ginger-garlic paste, red chilli powder, cumin-coriander powder, turmeric powder, garam masala and salt and keep aside.
- Wash brinjal and start cutting the brinjal from upside down. Make four slits but they must be join at the stem as shown in picture. Keep the stem.
- Now stuff the onion mixture into each brinjal and keep the remaining stuffing aside.
- Heat oil in a pan, add brinjal, keep lid and cook for 5 minutes. Now add the remaining onion mixture, mix and cook with lid on till oil oozes out. Mix gently mean while without braking brinjals.
- Add 1/2 cup water and cook for another 5 minutes and add milk and cook for another 2 minutes without lid.
- Serve with hot rice or chapati.
