Aloo (Potato) is an hidden gold. Aloo and Anday are life savers. If we have unexpected guest for lunch or dinner we will first think off eggs or potato or some times both. We can quickly make aloo fry, egg fry, egg bhurji or a combo of aloo and egg curry. Coming to egg bhurji, there are many varieties like cabbage egg bhurji, Ridge Gourd egg bhurji, Spring onion egg bhurji, Bottle gourd Egg bhurji..... All these recipes are my favorite and to them one more recipe is added. This is my kids favorite too.
Serves - 2 to 3
Ingredients:
- Potato - 2, Medium size
- Egg - 3, Large
- Onion - 1, Medium size
- Green Chilies - 2
- Coriander leaves - 1/4 cup, chopped
- Red Chilli powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Salt to taste
- Oil - 3 Tbsp
Preparation:
- Chop onions lengthwise and green chillies into small pieces and peel potatoes and make into medium size thin slices.
- Heat oil in a non stick pan, When oil is hot add onions and little salt and cook till onions are transparent.
- Add potato, red chilli powder, coriander powder and little water (3 tbsp water to avoid powder spices burning) and cook on low to medium heat with lid on. Stir in between.
- Mean while beat eggs in a bowl and add chopped green chillies and coriander leaves and mix them.
- When potatoes are done add beaten eggs and cook till eggs are done by mixing in between and adjust salt.
- Enjoy Aloo Egg Bhurji with hot rice or roti.
