Rice Pudding With Apricot


Hi Guys, Father's day is on it's way. Let's make some special recipe to our father or help our kids to make some special recipe to their papa. Let's tickle and awake his taste buds with some tangy, sweet, creamy, rich recipe. 

Rice pudding is an traditional Andhra recipe and we can also find rice pudding in many cuisines worldwide with little variations. Rice, milk and sugar are main ingredients. There are different variations in pudding depending on the preparation. Rice is directly cooked in milk in some regions and in some cuisines raw rice is made into paste and cooked in milk and some spices like nutmeg, cinnamon are used. Cream can be used in place of milk and honey in place of sugar. To flavoring the pudding we can use some artificial flavors or we can add fruit pulps.

Rice Pudding With Apricot


Ingredients
  • Uncooked Rice - 1/2 cup (Brown or White)
  • Apricot - 3
  • Milk - 3 cups (Whole milk)
  • Sugar - 1/2 cup or to taste
  • Honey - 1/4 cup
Preparation
  • Wash rice and cook it by adding 3 cups milk.
  • When rice is cooked, switch flame from medium to low and cook by stirring meanwhile till the milk thicken. (If require add more milk). Cooking on low flame  for long time will give rich taste like adding khoya/mava.
  • Grind apricots into puree and add to the rice along with sugar and mix.
  • Cook for 5 minutes and serve hot or cool.
