Schezwan sauce

                        Schezwan sauce is originated from china. It is the basic sauce for many recipes. It has a bold taste and the spiciness comes from garlic and red chillies. This sauce is very easy to make and it will be slightly sweet and spice.


Ingredients:

  • 10-12 Red chillies
  • 8 garlic pods
  • 1/4 tsp pepper
  • 1 tsp vinegar
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 2 tsp oil
  • salt to taste

Method:


  • De-seed the chillies and soak them in hot water for atleast 1 hr. (It will be easy to remove the seeds before soaking).
  • Grind the chillies into paste.
  • Finely chop the garlic.
  • In a pan heat oil, add garlic and when it turn golden brown add chilli paste.
  • Fry till oil leaves the edges.
  • Now add soy sauce, vinegar, pepper and sugar. Mix and fry for 1 min.
  • Add 1/4 cup water. Cook the sauce until it thickens.
  • If you want sauce consistency, add more water and cook for few min and store in a container. (But careful while adding water, don't add more water).
